I've tried to embed a number of flash widgets; it doesn't work. The widget or video or whatever will show in the preview, but not the message. An example would be the embed code from any youtube video.

I am 99% certain that the reason for this is that Gmail simply doesn't support embedded objects. Someone please let me know if I am horribly mistaken. Regardless, signature etiquette dictates simplicity. If you want to have a video in your signature, provide a link instead of trying to embed it directly.
Remember: The longer your signature, the less important you are.
